Blueberry Cobbler Ramekins
I love little Ramekins and always forget I have them, but they’re so cute and work great for individualized desserts. I made two little blueberry cobblers and was not disappointed.
- 1 Cup Blueberries
- 1 Tbs Honey
- 1Tbs Lemon Juice
- Topping: ½ cup Oats
- 2 Tbs Sugar
- 1 Tsp Cinnamon
- 1.5 Tbs Smart Balance Buttery Spread (or you can use Butter or Margarine)
- Preheat oven to 350. In a bowl mix the blueberries, honey and lemon, divide mixture in two and evenly distribute into two ramekins
- Either by hand or in a mixer combine the oats, sugar, cinnamon and smart balance until it forms a crumbly mixture. Divide in two and put on top of the blueberry mixture in the ramekins.
- Bake for 45-55 minutes and then let sit for 10-15 mins before serving warm
