Total time
Recipe type: Dinner, Lunch, Entree
Serves: 8
  • 1 medium onion, chopped
  • 1 packet taco seasoning
  • 1 tbs salt and pepper
  • 2 tbs extra virgin olive oil
  • 1 lb Lean Ground Turkey
  • 1 lb Frozen Corn
  • 1 can Medium Green Chiles diced
  • 4 oz Sharp Cheddar, shredded
  • 4 oz Part Skim Mozzarella cheese, shredded
  • ¼ cup Water
  • 1 can (15oz) black beans, rinsed and drained
  • 3 tomatoes, diced
  • 15 Corn Tortillas
  1. Preheat oven to 400. Chop the onion and in a large frying pan add olive oil and onions, then add taco seasoning and salt and pepper. Fry for about 3-4 minutes, and then add the turkey and the water. Cook until the turkey is almost all cooked through (about 5 minutes) and then add the chiles and corn, cook for 2 minutes, then add the black beans and tomatoes
  2. Spray a baking dish with cooking spray, then to assemble lightly spread filling mixture on bottom, then sprinkle with a little of the grated cheese, then add a layer of 5 corn tortillas (I used 4 whole, and then split one in half) then add another layer of filling, sprinkle some cheese, another 5 corn tortillas, and then the remaining cheese on top.
  3. Bake for 20 minutes and then let sit for 10 minutes before serving

Finished Mexican Lasagna Yum yum yum!
