Parmesan Tomato Crusted Turkey Meatloaf

This Turkey Meatloaf turned out so good! It is super moist and full of flavor.

Parmesan Tomato Crusted Turkey Meatloaf

Serves: 4-6
  • 1 Lb Extra Lean Ground Turkey
  • 2 Egg Whites
  • 1 Tsp Worcestershire Sauce
  • 1 Tbs Ketchup
  • 1 Tbs Mustard
  • ½ Cup Light Sour Cream
  • ½ Cup Italian Bread Crumbs
  • 2 Tbs Grated Parmesan
  • ½ tsp each of Salt, Pepper, Garlic Salt
  • For the Topping:
  • 20 Grape tomatoes
  • 1 Tbs Ketchup
  • 5 Tbs Grated Parmesan
  • ½ Tsp Salt
  1. Preheat oven to 375.
  2. In a bowl mix all the ingredients except the topping. Spray a loaf pan with cooking spray and add mixture. Bake in oven for 30 minutes.
  3. While the meatloaf is baking in a separate bowl add tomatoes (cut each tomato into 4) and the ketchup and stir, next add the grated parmesan and loosely stir.
  4. Add the tomato mixture to the top of the meatloaf and bake for another 40 minutes.

Parmesan Crusted Meatloaf I served the meatloaf with roasted carrots and potatoes and a small salad with italian dressing
