Rocky Road Cake In A Cup
I’ve attempted to make more cake-in-a-cup recipes than I care to admit, yet have been disappointed by every single one of them. They always turn out spongy (not in a good way) and just fall flat of expectations. Well, this recipe I threw together here changed my mind about cake-in-cup because it delivered everything I could want-the perfect cake portion that had an almost fudge brownie taste, combine that with the marshmallow and nuts that were ribboned throughout…yeah, it was amazingness in a cup! I’ve HAD to make this recipe more than once…recipe testing of course, right? Haha, this one is definitely a winner.
Best of all…it’s super easy to make. You just throw all the ingredients in a cup, zap it for a little over a minute, and then viola, you have yourself an individualized serving of rocky road cake in a cup! Perfect for when you’re craving some cake but don’t feel like spending hours in the kitchen baking!
- 4 Tbs Flour
- 3 Tbs Sugar
- 2 Tbs Cocoa Powder
- 3 Tbs Milk
- 2 Tbs Vegetable Oil
- 1 Tbs Water
- ½ Tsp Vanilla Extract
- 1 Tbs Mini marshmallows (or 2 marshmallows cut into little pieces)
- 1 Tbs Nuts (I used almonds but ok to use walnuts or pecans and just roughly cut them)
- Put all the ingredients in a microwave safe cup in the order they are listed starting with the flour. Use a fork and combine all ingredients.
- Microwave for 1 minute 10 seconds. Let cool for a minute and then enjoy!
