Sushi Salad

Every now and again I really crave sushi. This weekend was that time, and i had a bunch of ingredients on hand but didn’t feel like making sushi, I felt like a salad, so I played around at making a ‘shushi salad’ and it came out great, I could eat this salad instead of sushi any day!


  • Salad Dressing:
    • 2 tsp Red Miso Soup Dry Mix
    • 2 tsp Rice Vinegar
    • 2 tsp soy sauce
    • 2 tsp agave nectar
    • 1 garlic clove, minced
    • ½ to 1 inch worth of fresh grated ginger
    • 1 tsp sesame oil
    • 4 tbs water
  • Salad
    • ½ cup cooked brown rice (cooked ahead of time)
    • 1 sheet Nori
    • 1 carrot, shredded
    • 2 green onions, chopped
    • 1 avocado, chopped
    • 1-2 tsp sesame seeds
    • 2 cups lettuce mix


In a small bowl whisk together all of the salad dressing ingredients and set aside. Set out two bowls for the salad. Shred one carrot evenly between the two bowls, next add the chopped green onion dividing between the two bowls. Next add the brown rice and avocado and sprinkle generously with sesame seeds. Cut the Nori sheet in little pieces with a kitchen scissor and add to both bowls. Then add the lettuce and stir, when mixed, add dressing and enjoy.
