Tilapia with Brown Rice and Zucchini
This is my first recipe post!
Tilapia Fillets (I got a bag containing 5 individually wrapped fillets)
1 cup Short Grain Brown Rice
2 medium Zucchini
1 Garlic Clove
4 Tbs Flour
1 Tsp Old Bay Seasoning
1 Tsp Salt
2 Tbs Olive Oil
Start the rice according to the directions on the package (you can use instant brown rice if you prefer a quicker time to prepare, or you can make ahead and microwave to warm-this is what I did). While the rice is cooking, you can prepare the flour mixture and cut the zucchini. When the rice only has about 20 min remaining, start cooking the fish and vegetables.
In a bowl mix flour, Old Bay Seasoning and Salt. Take Tilapia fillet and cover with the flour mixture one at a time. Put 1 Tbs Oilve Oil in a pan, one by one, as the fillets are done being covered, put in the pan. When all the fillets are in the pan turn the heat to medium-high. In another pan, add the remaining 1 Tbs Olive Oil to a second pan, mince the garlic clove (I use a garlic press and it works wonders) and add to the Olive Oil, and then add zucchini and cook on high. The Tilapia fillets needed about 6-7 min per side. Only flip them once so they don’t get over done and fall apart. Stir the zucchini semi frequently, leaving enough time for them to brown slightly on some sides. When done put on a plate and serve with a slice of lemon if desired.
