Chicken Fajitas with the Best Guacamole Recipe

Remember when I posted my Gluten-Free Taco Tuesday‘s recipe and posted about how amazing the Frontera Grill seasoning packets by Chef Rick Bayless were and how my husband ate 7 tacos (sorry babe 🙂 )? Well, here is another recipe using a Frontera Grill Seasoning packet that was equally amazing! With the Fajitas I am sharing my recipe for the best guacamole, the recipe is tried and true-my husband is actually the one to thank for this recipe. I’m sensing a giveaway of these seasoning packets…anyone interested?

Chicken Fajitas with the Best Guacamole

Recipe type: Dinner, lunch, taco tuesday
Serves: 6
  • 1.5 Lbs chicken, cut into strips
  • 1 pouch Frontera Classic Fajita Skillet Sauce (8oz)
  • 1 onion, chopped
  • 1 Tbs olive oil
  • 1 bag sweet peppers or 2 bell peppers, cut into strips
  • ½ jalapeno, finely chopped
  • Flour or corn tortillas
  • For the guacamole: 2 avocados
  • ½ jalapeno, finely chopped
  • ½ tomato, finely chopped
  • 2 garlic cloves, crushed
  • 1 Tbs Cilantro, chopped
  • Juce of ½ a lime
  • pinch each of garlic salt, salt, and pepper
  1. Saute the bell peppers, onions, jalapeno in olive oil until onions are translucence, take out of pan and let rest in a bowl. Put the chicken into the pan and saute until cooked throughout. Add the contents of the sauce packet, then add the peppers back. Let everything cook for 5 minutes.
  2. For the guacamole, it's super simple, mash up the avocados in a bowl and add all the other ingredients and stir until well combined.
  3. For the fajitas warm them, serve with a little bit of shredded Monterrey jack or cheddar, guacamole and the chicken and peppers.
